I would like sometime between may and july to purchase a 325i via ED (as I have family in Europe) and it's cheaper When should I start contacting the dealer about it? I live in the BayArea
The car that I want is a: 325i barrique red with Dakota leather
premium package nav/I drive system and maybe comfort access manual
is the sport package essential?
Also any suggestions about ED?

There is an ED forum dedicated to this topic. There are many, many great threads that I am sure you will find extremely helpful. ED is a wonderful program, I have my first one coming up in one week I contacted a dealer a little over two months ago, but it varies from person to person when they start planning. There is also a thread in the ED area for dealers (including sponsors of this site) who are particularly good at ED and you might seriously consider contacting those before making your choice.

Here is my ED time line with a dealer in east bay.
Ordered the car in May Traded in my car with add. $$ from credit card in early Jul I did my ED in Mid Aug Making my 1st payment to BMWFS next week Waiting for the car... s/b in the port next week after VPC and truck to the dealer for pickup in Mid Oct (I hope)
