I'm curious if its been documented or if history has proven that a specific type of BMW has had a reputation for being more low maintenance than others.
Also, is there a particular model that has been considered the most high maintenance?

If by "low maintenance" you mean "reliable:"
The 3 series (and derivatives - Z cars, etc), in general, are the most reliable models and have the cheapest parts. Most common problems are related to trim and sensors and such.
The 5er can go either way. The 6 cyl models tend to be about as reliable as the 6 cyl 3er, but the V8 cars are pricier to maintain and repair.
The 7 series is the worst, largely due to the electronic complexity and V8 engines. Serious electronic issues are relatively common in the 7er cars.
In terms of scheduled maintenance, they all have similar intervals, with the exception of the M cars.

See for instance how many 80s 3 series are still on the streets running around. There cars are immortal. And how many 80's seven series ?? Very few. Too many problems, too few parts.

There was a guy at the last autocross I attended that had an E30 325e.
He replaced the timing belt @ 70k miles. The next time it needed replacing, the cost to replace it was more than the car was worth, so he didn't bother. He figured he'd just keep driving it until it died.
It now has 315k miles on it. He loves telling people that the last time he changed the timing belt was "a few hundred thousand miles ago."
