We are arriving in Munich two days before we are scheduled to pick up the car at the delivery center. The day we pick up the car we are traveling by train to Paris, leaving at 10PM. That only leaves part of one day with the car since it has to be dropped off by 4:30PM.
Is it possbile to move up the delivery by one or two days?
If we only have the car for 8 hours, are we better off just paying someone to drive it to the drop-off point?

BMW obtains insurance and registration 1 week before the scheduled pick up date and once it is completed they will NOT change it. If you are close to the delivery (within two weeks) contact your SA immediately. If you are still several weeks or months out, I believe date change is relatively minor.
Can't help you on the surrogate drop off.

Yes, as anlauf said, if your dates are way off no problem, but you can't fly there Tuesday and call them and say, 'hey, I'm here now, can I come by and get it, instead of Friday".
As to the other part, no need to pay someone to drive your car to the drop-off location. You can have the day or 1/2 day with it, take a nice drive up the autobahn and then drop it off yourself, or at least just drive it the 10 minutes over to the drop-off location yourself. Why do you need someone else?

You have to personally pick up the car, you can't have a surrogate. You have to have your passport.

We don't pick it up until July 21, so there still is alot of time. My dealer tells me the date can't be changed. Is there a way to directly contact the ED division to change the scheduled date?

It is pretty easy to change the pick up date so much early in the stage. There is a 800 # for BMW ED somewhere on this site. Call them and they will help. I changed mine directly with them and received an email confirmation of the change in a couple of hours.
