Are there various kinds of thickness films out on the market that have specific applications (street vs track).
I've seen Xpel advertise using 3M scotchguard film which shows about 3mil thickness (0.293 mm) according to the specification sheet.
I've also seen other paint protection films offering 6mil thickness.

There are many thicknesses. Application is up to you if you're just going to buy bulk and cut it yourself. Xpel uses 8mil, 12mil and 40mil. The 40mil stuff isn't something you'd want on a body panel (think huge ridge), but it is effective on headlight lenses.
FWIW, mil is thousandths of an inch. Which is right there on the Xpel spec sheet. Don't count the liner unless you want your car covered in white paper with a bunch of red 3M logos printed on it. In which case you'll have to add the thickness of whatever adhesive you choose. 
I prefer the 12mil for bulk. I've bought rolls of 8mil and 12mil, but I reach for the 12mil more often. But it's not like racing tape, it costs more and removing it means destroying it (stretches and doesn't return to its original shape). Pre-cut, you get what you get. Xpel kits are 8mil for our cars (and 40mil for the headlight kits).

The xpel PDF specification sheet says 3mil

so that's why I didn't consider Xpel just because of the advertised thickness on their website.
12mil sounds nice, but it sounds like 12mil doesn't come in any pre-cut configuration. I suppose you can request it and have it custom cut?

I kept adding the mm thickness thinking "mil" meant millimeter.
